Minestrone Soup

This is another receipe that has taken me a long time to get right due to the many dangerous rich flavours of a classic minestrone soup.

Heat the oil in a pan over low-medium heat.

Gently fry the vegetables (celery, courgette, carrot) for 5-10 mins, adding the herbs (oregano, basil) in between.

Add the chopped tomatoes, puree, stock and fresh basil - season to taste

Bring to simmer and cook for 30 minutes

Add the pasta half way so it cooks for 10-15 mins.

Tip: Removing the seeds from a courgette can be a pain in the a$$! I recommend cutting the courgette into 2 down the middle, then using a teaspoon to “scoop” out the middle.
