Thai curry

Ingredients

  • 500ml stock (chicken or vegetable)
  • 2tbsp Finely chopped ginger
  • 4-8 Kaffir lime leaves
  • 2 stalks of lemon grass
  • 1 Red Pepper
  • 1/2 can of sweetcorn
  • 1 Green chilli
  • 1 Red chilli (Caution: use 3 slices depending on spice)
  • 1tbsp Curry Powder
  • 200ml Coconut Milk
  • 1tbsp Rapeseed Oil
  • 1tbsp Fish sauce

Instructions

Fry pepper, ginger, chilis and curry powder together with rapeseed oil.

Combine stock, coconut milk and fish sauce to the pan.

Add lemon grass and kaffir lime leaves

Simmer for 1-2 hours. Add the sweetcorn mid-way

Optional: Add rice noodles at the end or cook with fresh prawns
